Legume & Tomato Curry

*Saute 2 small onions with 2 cloves garlic.
*Add curry spices to taste (garam masala, turmeric, coriander, etc.)
*Add a large can of diced tomatoes plus 1-2 cans chickpeas (or some cooked chickpeas).  Bring to a boil.  Also add about 1/2 c. lentils and some potatoes. 
*Simmer until the lentils are tender (about 40 minutes).
*Add some spinach and cook until wilted.
*Serve with rice or in a tortilla.
