Fiesta Eggs

From the Dairy Free cookbook

12 eggs
1/2 c. water
4 T. butter or sub
1 t. pepper
10 tortillas
1 12 oz. jar picante sauce

Beat eggs with water until very foamy.  Melt the butter, then add eggs and cook on low heat, tossing with a wooden spoon.  Add pepper and mix.  Place a scoop (~3/4 c. of egg mixture into each tortilla, then roll up the sides and place in a pan.  Spoon about half the picante sauce over the tortillas and heat in 350 degree oven for 20 minutes.  Serve with additional sauce.
