Homemade Vegan Mayo

From the Uncheese Cookbook

Blend until smooth:

1.5 c. firm silken tofu, drained and crumbled
2 T. lemon juice
1 T. white wine vinegar OR brown rice vinegar
1-2 t. sweetener (brown rice syrup, agave)
1 t. salt
1 t. prepared yellow mustard

Add a little canola oil if you want to make it creamier.
