Kefir Non-Cheese

From the Uncheese Cookbook.  As a substitute for yogurt or cream cheese.  Add fruit conserves to make fruit yogurt.  Can also replace buttermilk and sour cream.  Variations below.

Process until smooth, then chill:

1.5 c. firm silken tofu, crumbled
1.5 T. lemon juice
1 T. plum vinegar
1 T.mirin

Herb:  1 clove minced garlic, 1/4 t. each dill, rosemary, thyme, and parsley
Caraway:  1 finely minced clove garlic, 1 T. chopped capers, 2 t. ground caraway seed
Date and Nut:  1/4 c. chopped walnuts and 1/4 c. chopped dates
Pineapple:  1/4 c. drained unsweetened pineapple tidbits
Vegetable:  1 minced scallion, 1 finely minced garlic clove, 1 small grated carrot, 1/4 c. minced red or green bell pepper, and 1/4 c. minced fresh parsley
