Cream Non-Cheese

From the Uncheese Cookbook

1/4 lb. firm tofu, patted dry and crumbled
1/3 c. firm silken tofu, patted dry and crumbled
1.5 T. lemon juice
1.5 t. tamari
1/2 t. nutritional yeast flakes

Process until smooth.

For a richer flavor, here is a slightly different recipe:

1/4 c. raw cashews
3 T. water
2 T. lemon juice
2 t. maple syrup

Blend, then add:

1 c. firm tofu, patted dry and crumbled
3/4 t. salt
scant pinch of garlic powder

Chill.
