Unprocessed Non-Cheese Sauce

Soy-Free Version here

1 medium potato, peeled and coarsely chopped
1 medium carrot, scraped and coarsely chopped
1 medium onion, coarsely chopped
1 c. water

Bring to a boil.  Cover, reduce heat to medium, and simmer for about 10 minutes or until veggies are tender.  Transfer to a blender, and process with rest of ingredients until smooth:

1/2 c. firm silken tofu, drained and crumbled
1/2 c. nutritional yeast flakes
2 T. lemon juice
1.25 t. salt
1 t. onion granules
1/4 t. garlic granules

Serve immediately or keep warm.
