Vegan Double Chocolate Cookies

From:  http://recipes.sparkpeople.com/recipe-detail.asp?recipe=321393

Ingredients

1/2 cup canola oil

    1 cup sugar
    1 tbsp vanilla
    1 tablespoon ground flax seeds
1/2 cup soy milk (almond milk)
1 and 1/2 cups all purp flour
3/4 cup dutch processed cocoa powder
    1 teaspoon baking soda
    1/2 teaspoon salt
    1 cup chocolate chips (vegan)

Directions

In a large bowl ,sift together flour, cocoa, baking soda and salt.

In a separate large bowl cream together oil and sugar. Add the flax seeds and soy milk. Mix well. Add the vanilla.

Fold in the dry ingredients in small batches. When it starts to get too stiff to mix with a spatula, use your hands until a nice stiff dough forms. Alternatively, a dough hook on a stand mixer can be used for this process. Add the chocolate chips.

Roll dough into 1 inch balls and place on a greased cookie sheet (you could also use parchment paper here) about an inch apart. The cookies will not spread out that much.

Bake for 10 minutes at 350 F. Do not overbake! Remove from oven and let cool for about 5 minutes, then set them on a wire rack to cool completely.

Gluten-Free Bread

Loosely based off this one  and also my basic whole wheat bread.

1 T. yeast
1 T. sugar
1.5 c. warm water
1/2 c. rolled oats

Combine and let the yeast work a bit and oats soak.

Then add about 3 c. all-purpose gluten free flour mix* and 1 t. salt.

Whisk together 1 egg, 6 T. water (3/8 c.), 2 T. flax, 1.5 T. canola oil, and 1 t. cider vinegar and add that.  Mix it for a few minutes.

Put it in a greased loaf pan and rise for about 50 minutes (it won't rise as much as whole wheat bread does).  Bake at 425 degrees for 40 minutes.

*All-purpose gluten-free flour mix:  2 c. rice flour, 2 c. potato starch, 1 c. sorghum flour, and 2 T. xanthan gum.  Mix very very well.

Balls of yumminess

From The Family Nutrition Book by Sears

So all you do, is you take 1/2 cup of each of these things:

crunchy peanut butter
honey
carob powder
raw sunflower seeds
sesame seeds
rolled oats

And 1/4 cup ground flaxseed if you want (I did).

And then mix it all up and shape them into little balls. It makes about 30 little balls.

And then you have some yummy little balls to eat.

Yum. Yum yum.
