small package instant vanila pudding
1 c. buttermilk
Combine and mix together.
Drain: 1 can of fruit cocktail and 1 can mandarin oranges
Add 8 oz. cool whip, 1 c. mini marshmallows
Add crushed fudge stripe cookies just before serving. Can also use pineapple tidbits instead of the fruit cocktail.

Alisha's peanut butter cookies
Recipe from Alisha.
1/2 c. white and 1/2 c. brown sugar.
1/2 c. butter
1/2 c. peanut butter
1 egg
1.25 c. whole wheat (pastry) flour
3/4 t. baking soda
1/2 t. baking powder
1/4 t. salt
1/4 bag each choc and pb chips (Kyle likes MOAR)
375 degrees for 10 minutes.

Smoothie Dust
1/2 c. ground flax seed (heaping)
2 2/3 T. wheat germ
1 heaping teaspoon cinnamon
1/2 tsp. nutmeg
dust of 4 B vitamins
Keep in a covered jar and then add 1.5 T. per smoothie.

Single-Serving Mocha Chocolate Cake
From Chocolate Covered Katie
I made it the first time using maybe a tsp of sugar and then a tablespoon or so of agave nectar. It needs more sweet.
- 1 tablespoon plus 2 tsp cocoa powder
- 3 tablespoons spelt flour (or white, or even peanut flour)
- 1/2 tsp instant coffee granules
- 1/8 tsp salt
- 2 tsp evaporated cane juice (or sugar)
- 1/4 tsp baking powder
- 1 stevia packet (or 1 more tablespoon sugar)
- 1 tablespoon coconut or veg oil (Edit: many commenters have said it still tastes good if you sub applesauce or mashed banana. But I can’t personally vouch for the results if you make that substitution.)
- 3 tablespoons milk of choice (I used almond milk)
- 1/4 tsp pure vanilla extract

All-Season Blend
Called for in some of the Uncheese Recipes
1.5 c. nutritional yeast flakes
3 T. salt
1 T. onion granules
1 T. paprika
2 t. garlic granules
1 t. dried parsley flakes
1/2 t. turmeric
1/4 t. dried thyme
1/4 t. dried marjoram
1/4 t. ground dill
Grind in food processor. Store in covered container at room temp. To make broth, it's 1.5 t. of this mix to 1 c. of water.

Vegetables Julienne
From the Dairy Free cookbook
2 small zucchini
6 carrots
Slice the above into thin strips. Heat 2 T. butter or sub with 3 t. soy sauce. In this, stir-fry the zucchini, then the carrots separately. Combine and sprinkle with 1/2 c. chopped green onion. Stir-fry for about 30 seconds to blend flavors. Sprinkle with 1 T. brown sugar and cook for another 30 seconds. Serve immediately.

No-Bake Peanut Butter Chocolate Cookies

(sugar-free and gluten-free, too!)

- 1/4 cup peanut butter (you can probably sub another nut butter)
- 1/4 cup plus 3T raisins
- salt to taste (I used a little over 1/4 tsp, but I like salty pb cookies!)
- 2 T roasted, unsalted peanuts (Or maybe another nut, if you’re allergic to peanuts? Also: If you can only find salted peanuts, reduce or omit added salt)
- 1/8 tsp pure vanilla extract
- 1-2 T cocoa powder (to taste)
- optional: chocolate chips, either before or after blending (or both!)

Cookie Dough Dip

Sweetener Notes: I used 2/3 cup brown sugar when I first made this for the party. Liquid sweeteners (agave, maple, etc.) are fine as well. You can easily get away with less sugar– some people will be perfectly fine with just 3 T for the whole recipe! And if you don’t want any sugar, be sure to check out the “no-sugar” version linked above. (You can also use stevia, if you like the taste of stevia-sweetened desserts. Try 2-3 packets of NuNaturals stevia, and add more sweetener if needed. I wouldn’t recommend serving an all-stevia version to party guests, though.)
Mel's notes: I used the 2/3 cup brown sugar recommended (scant) and we could use less. I used 3 T. flaxseed meal and the entire 1/4 c. almond milk (but could cut that down too, use food processor next time instead of blender because it was too thick to blend). Also used peanut butter. It was good!

- tiny bit over 1/8 tsp baking soda

*1-2 chicken breasts, chopped and fried up in olive oil.
*Add 2 T. each honey and soy sauce.
*1 red pepper, 2 green onions, and some raw cashews (or roasted, if can't find raw).
*Dash of lime juice, a little cilantro.
*Serve with rice.

Apple Cider Syrup

Total Time: 15 minutes
Ingredients:
- 1 3/4 C. (cup) apple juice or cider
- 1/4 C. packed brown sugar
- 2 T. (tablespoon) cornstarch
- 1/4 t. (teaspoon) ground cinnamon
- 1/8 t. ground nutmeg
Preparation:
Boil juice and sugar until sugar is dissolved. Stir in cornstarch, cinnamon and nutmeg. Reduce heat and simmer for 5 minutes.

I couldn't get the molasses open so I used a little honey. I also used more coffee - maybe a third coffee and the rest almond milk. It even tastes good without any sweetener (not even the honey or molasses).

Vegan Chocolate Frosting

Add the vanilla and stir. Allow the frosting to cool.
Ingredients:
- 3 ounces unsweetened chocolate
- 2 tsp vegan margarine
- 1/4 cup hot water
- 2 cups powdered sugar
- 1 tsp vanilla extract
Preparation:
Over very low heat, or in a microwave on low power, melt the chocolate and vegan margarine together. Transfer to a mixing bowl and add the hot water. Slowly stir in the sugar until the frosting is creamy. You may not need the entire 2 cups of sugar.Add the vanilla and stir. Allow the frosting to cool.

Balls of yumminess

So all you do, is you take 1/2 cup of each of these things:
crunchy peanut butter
honey
carob powder
raw sunflower seeds
sesame seeds
rolled oats
And 1/4 cup ground flaxseed if you want (I did).
And then mix it all up and shape them into little balls. It makes about 30 little balls.
And then you have some yummy little balls to eat.
Yum. Yum yum.
