Vegan Double Chocolate Cookies

Ingredients

1/2 cup canola oil

    1 cup sugar
    1 tbsp vanilla
    1 tablespoon ground flax seeds
    1/2 cup soy milk (almond milk)
    1 and 1/2 cups all purp flour
    3/4 cup dutch processed cocoa powder
    1 teaspoon baking soda
    1/2 teaspoon salt
    1 cup chocolate chips (vegan)

Directions

In a large bowl ,sift together flour, cocoa, baking soda and salt.

In a separate large bowl cream together oil and sugar. Add the flax seeds and soy milk. Mix well. Add the vanilla.

Fold in the dry ingredients in small batches. When it starts to get too stiff to mix with a spatula, use your hands until a nice stiff dough forms. Alternatively, a dough hook on a stand mixer can be used for this process. Add the chocolate chips.

Roll dough into 1 inch balls and place on a greased cookie sheet (you could also use parchment paper here) about an inch apart. The cookies will not spread out that much.

Bake for 10 minutes at 350 F. Do not overbake! Remove from oven and let cool for about 5 minutes, then set them on a wire rack to cool completely.

Veggie Brown Rice Wraps

Adapted from Taste of Home big cookbook.

Cook brown rice.
Cook kidney beans.

Then saute:  1 pepper (any color), 1 container of mushrooms, 1 c. frozen corn, some cumin and pepper.

Serve all above with shredded cheese and salsa.

Crustless Vegan Pumpkin pie

Crustless Pumpkin Pie

(can be gluten-free)
  • 1 tsp pumpkin pie spice
  • 2 tsp cinnamon
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1/3 cup flour (Almost any will work, but not coconut flour) (42g)
  • 1/3 cup xylitol or brown sugar (You can use a liquid sweetener. It’ll just be a bit gummy) (53g)
  • 2 nunaturals stevia packs, or 2 extra tablespoons brown sugar
  • 1 (15-oz) can pumpkin puree
  • 3/4 cup plus 2 tbsp milk of choice (210g)
  • 2 tbsp oil, or omit and increase milk to 1 cup
  • 1 tsp ener-g powder or 1 tablespoon ground flax (a commenter said cornstarch works, but I haven’t personally tried it.)
  • 2 1/2 tsp pure vanilla extract
Preheat oven to 400 F, and grease a 10-inch round pan. In a large mixing bowl, combine first 7 ingredients, and stir very well. In a separate bowl, combine all liquid ingredients with the energ or flax, and whisk. Pour wet into dry, stir to combine, then pour into the pan and bake 35 minutes. (It’ll still be gooey after baking, but that’s ok.) Allow to cool completely before transferring uncovered to the fridge to “set” for at least 6 hours before trying to slice.

Mel:  I added crushed graham crackers to the top for crunch.

South American Steak Sauce

15 ounces reduced sodium soy sauce
6 ounces tomato paste
6 tablespoons distilled white vinegar
3 teaspoons garlic powder
1 1/2 teaspoons cayenne powder
1 teaspoon paprika
1/4 teaspoon cumin
1/4 teaspoon sage

Directions:

Mix all the above ingredients together.

Quantity of vinegar may be adjusted to attain desired consistency.

Let stand in refrigerator overnight so flavors can blend.

Stir before use, and refrigerate when not in use.

Especially good marinade for steaks and pork chops.

Cookie Dough Popsicles

Cookie Dough Popsicles
(gluten-free!)
Adapted from this recipe.
  • 2/3 cup milk of choice or vanilla-flavored yogurt of choice (160g)
  • 1/2 tsp pure vanilla extract
  • 1/16 tsp salt (trust me)
  • 2 tbsp coconut sugar or brown sugar (You could use stevia, but it won’t have as much of a cookie dough flavor) (16g)
  • 1 nunaturals stevia packet (or 1 1/2 tbsp more sugar)
  • 1 tbsp mini chocolate chips (15g)
Combine all ingredients and stir well. Pour into paper cups or popsicles molds, and freeze. (If you want the chocolate chips to not all sink to the bottom, pour only 1/2 the mixture into each pop mold and freeze, then add the rest and freeze again.)

Overnight Oats and Fruit

Combine and leave in fridge overnight:

2 c. oatmeal
1 c. milk
1 c. apple juice
1/4 c. honey
1 t. cinnamon

In the morning, add:

3/4 c. nuts (optional)
1 tart green apple, sliced thinly
6 oz. yogurt
1 c. desired berries

Serves 4.

Banana Bread

2 eggs, beaten
1/4 c. milk
1/2 c. oil
1/2 t. vanilla
1/2 c. sugar
2 c. flour
1/2 t. baking powder
1/2 t. baking soda
dash salt
2-3 ripe bananas, smashed
1/2 c. nuts

In a greased loaf pan, 350 degrees for 1 hr.

Cappuccino Muffins

From Taste of Home

Dry:

2 c. flour
1/2 c. sugar
2.5 t. baking powder
1 t. cinnamon
1/2 t. salt

Wet:

1 c. milk
2 T. instant coffee
1/2 c. canola oil
1 egg
1 t. vanilla

Mix and add 3/4 c. choc chips

375 for 17-20 minutes.

Topping:

4 oz. cream cheese
1.5 t. sugar
1/2 t. instant coffee
1/2 t. vanilla
1/4 c. choc chips

Heat topping together.

Apple Crisp with Oatmeal Crust

8 apples, cored and sliced, in 9 x 16 baking pan.

Topping: 

3/4 c. brown sugar
1 c. ww flour
1.5 c. oatmeal
1.5 t. cinnamon
1.5 t. nutmeg
1 c. oil
2 T. ground flaxseed

35 minutes at 375 degrees

Chocolate Dairy-Free Carrot Cake

3/4 c. canola oil
1/2 c. orange juice
1/2 c. sugar
1/3 c. cocoa
1 c. soft tofu
2 c. grated carrots
1 c. ww pastry flour
1 c. brown rice flour
2 t. baking soda
1/4 t. salt
1 t. cinnamon

350 degrees for 50-55 minutes.

Blueberry Dessert

Grandma J's recipe

Mix 1/2 c. sugar, 24-26 crushed graham crackers (so, 12-12.5 whole ones I think), and 1/2 c. melted butter.

Put in 9x13 pan.

Mix 8 oz. cream cheese, 1/2 c. sugar, 2 beaten eggs, 1 t. vanilla, pour over top.

Sprinkle with cinnamon and bake at 350 for 15 minutes.

Cool, then add 1 can of blueberry pie filling, and top w/ whip cream.

Cookie Salad

Recipe from Kyle's mom

small package instant vanila pudding
1 c. buttermilk

Combine and mix together.

Drain:  1 can of fruit cocktail and 1 can mandarin oranges

Add 8 oz. cool whip, 1 c. mini marshmallows

Add crushed fudge stripe cookies just before serving.  Can also use pineapple tidbits instead of the fruit cocktail.

Alisha's peanut butter cookies

Recipe from Alisha.

1/2 c. white and 1/2 c. brown sugar.

1/2 c. butter
1/2 c. peanut butter
1 egg
1.25 c. whole wheat (pastry) flour
3/4 t. baking soda
1/2 t. baking powder
1/4 t. salt
1/4 bag each choc and pb chips (Kyle likes MOAR)

375 degrees for 10 minutes.

Raspberry Truffle Brownies

*Melt 1/2 c. butter and 1.5 c. chocolate chips over low heat.

*Beat together 2 eggs and 3/4 c. brown sugar.

*Dissolve 1 t. coffee granules in 2 T. water and add all three of these mixtures together, mixing well.

*Add 1/2 t. baking powder and 3/4 c. white flour.

*Spread in a small baking pan and bake at 350 degrees for 30-35 minutes.

*For frosting, mix an 8 oz. package cream cheese, 1 c. melted chocolate chips, 1/4 c. powdered sugar, and 1/3 c. raspberry jam or jelly.

*Refrigerate.

Gingerbread House Frosting

Mel's mom's recipe

1 c. of butter (or traditionally, we used shortening)
1.5 t. vanilla extract
4.5 c. powdered sugar
3/4 c. milk

Smoothie Dust

1/2 c. ground flax seed (heaping)
2 2/3 T. wheat germ
1 heaping teaspoon cinnamon
1/2 tsp. nutmeg
dust of 4 B vitamins

Keep in a covered jar and then add 1.5 T. per smoothie.

Vegan Brownies

Ingredients:

  • 1 cup all-purpose flour
  • 3/4 cup sugar
  • 1/2 cup cocoa powder**
  • 1½ tsp. baking powder
  • 1/3 cup unsweetened apple sauce
  • 1/4 cup canola oil
  • 2/3 cup natur-a Original soy beverage mixed with 1 tsp. vinegar
  • **Please ensure the cocoa contains no traces of nuts or peanuts

Preparation:

1. Preheat the oven to 350 °F (180 °C) or to 325 °F (160 °C) for a convection oven.
2. Brush a square pan with cooking oil and sprinkle the bottom with flour.
3. Mix the ingredients in the order of the recipe until smooth.
4. Bake for 50 minutes or for 35 minutes in a convection oven. Cool completely before cutting.

Basic Frittata

Saute whatever vegetables you like, add spices and frozen veggies or whatever.  Do this in the big skillet.

For example, I used onions, pepper, black beans, and corn, and spiced with cumin, pepper, and thyme.

Then add 8 eggs whisked together with a little rice milk (maybe 1/4 c.).  Cook without sitrring until partially cooked.  Then put it under the broiler until it is done and starts to brown.  Can add fresh tomatoes or whatever over top and put it back in long enough to warm up.  /and/or add cheese.

Single-Serving Mocha Chocolate Cake

  • 1 tablespoon plus 2 tsp cocoa powder
  • 3 tablespoons spelt flour (or white, or even peanut flour)
  • 1/2 tsp instant coffee granules
  • 1/8 tsp salt
  • 2 tsp evaporated cane juice (or sugar)
  • 1/4 tsp baking powder
  • 1 stevia packet (or 1 more tablespoon sugar)
  • 1 tablespoon coconut or veg oil (Edit: many commenters have said it still tastes good if you sub applesauce or mashed banana. But I can’t personally vouch for the results if you make that substitution.)
  • 3 tablespoons milk of choice (I used almond milk)
  • 1/4 tsp pure vanilla extract
Combine dry ingredients and mix very, very well. Add liquid, stir, then transfer to a little dish, ramekin, or even a coffee mug. Microwave 45-50 seconds (or more, depending on how powerful your microwave is). If you don’t want to eat it straight out of the dish, be sure to spray your dish first (and then wait for the cake to cool before trying to remove it).

I made it the first time using maybe a tsp of sugar and then a tablespoon or so of agave nectar.  It needs more sweet.

serve on bread or buns, with ketchup.
