Colored Frosting without Artificial Colors

1/2 c. jelly (I used huckleberry to make purple)
1 egg white
2 T. sugar
dash salt

Cook, beating constantly, for a while until it gets thick.  Remove from heat and beat as it continues to thicken, then spread.  This was REALLY Sticky when dry and only frosted about a dozen cookies.  But looked very pretty and shiny.

Overnight Oats and Fruit

From Recipezaar.

Combine and leave in fridge overnight:

2 c. oatmeal
1 c. milk
1 c. apple juice
1/4 c. honey
1 t. cinnamon

In the morning, add:

3/4 c. nuts (optional)
1 tart green apple, sliced thinly
6 oz. yogurt
1 c. desired berries

Serves 4.

Cilantro Naan

Recipe from an Indian cookbook I think?

6 c. white flour, 1 T. baking powder, 1 t. sugar, and 1 t. salt, mix together.

Add 1.25 c. warm water + 1 egg.  Make a dough.

Rest for 30 minutes.

Work in ~4 T. oil and a handful of fresh cilantro, knead.

Make 10 balls, rest one hour.

Pre-heat cookie sheets in a 450 degree oven.

Roll balls out, grease sheets, and bake them for 5-6 minutes or until golden brown, brush with oil.

Single-Serving Mocha Chocolate Cake

From Chocolate Covered Katie

  • 1 tablespoon plus 2 tsp cocoa powder
  • 3 tablespoons spelt flour (or white, or even peanut flour)
  • 1/2 tsp instant coffee granules
  • 1/8 tsp salt
  • 2 tsp evaporated cane juice (or sugar)
  • 1/4 tsp baking powder
  • 1 stevia packet (or 1 more tablespoon sugar)
  • 1 tablespoon coconut or veg oil (Edit: many commenters have said it still tastes good if you sub applesauce or mashed banana. But I can’t personally vouch for the results if you make that substitution.)
  • 3 tablespoons milk of choice (I used almond milk)
  • 1/4 tsp pure vanilla extract
Combine dry ingredients and mix very, very well. Add liquid, stir, then transfer to a little dish, ramekin, or even a coffee mug. Microwave 45-50 seconds (or more, depending on how powerful your microwave is). If you don’t want to eat it straight out of the dish, be sure to spray your dish first (and then wait for the cake to cool before trying to remove it).

I made it the first time using maybe a tsp of sugar and then a tablespoon or so of agave nectar.  It needs more sweet.

Chicken Quinoa Lentil Pilaf

*Cook 3/4 c. lentils and 3/4 c. quinoa (rinsed) in 1 c. chicken broth and 1 c. water.

*Saute 2 carrots, 2 green onions, and 3 stalks celery in a little olive oil.  Add some lemon pepper, thyme, kale, and sunflower seeds, and a can of chicken.  (Kyle says more spices!)

*Mix the two together.

Pie crust

For 2 pie crusts:

3.75 c. whole wheat pastry flour, 1/2 t. salt.  Mix in food processor.

Add a stick and a half of butter or soy butter, cold but softened in fridge, not frozen.  Blend, blend, blend.

Add ~6 T. cold water and blend more.

Roll it out and fill!

Basic Rolls

From Taste of Home's big cookbook, modified.

 Dissolve 2 packages worth of yeast and 1 t. sugar in 1/2 c. warm water.

Add 1 c. warm milk, 2 t. salt, 1 egg, 8 t. (2 T. + 2 t.) canola oil, 6 T. sugar, and 1/2 c. more warm water.

Stir in 2 c. whole wheat flour.  Start to mix and knead, adding additional white flour.

Let it rise, punch down, make into rolls (2.5 dozen), rise again, then bake at 375 degrees for 10-15 minutes.

Sausage, Mushroom, and Swiss pizza

Top with:

*Swiss cheese.
*Italian sausage, cooked with onions, spinach, salt, pepper, cumin, paprika, and thyme, drained.
*Mushrooms.
*Over the top, cheddar and Monterey Jack cheese.

Graham Crackers

Graham Crackers:

1/3 cup canola oil
1/3 cup honey
1/4 cup skim milk
2 Tablespoons molasses
1 teaspoon vanilla
2.5 cups whole wheat pastry flour (ended up being about 2.75 cups at the end)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon

Mix. Add more flour if needed (up to 3 cups the recipe said). Roll out dough onto greased cookie sheet, cut squares, poke holes with fork. Bake 25 minutes at 300 degrees.

Everett enjoyed the graham cracker I let him test, although it did get pretty messy after being wet down with his saliva. Note: Yes, these do contain honey, but honey that has been cooked, in baked goods like this, or cereals, are ok for babies. Raw honey is not.

Homemade Frozen Hashbrowns

Makes 1 batch.

*Boil 9 Russet potatoes, halved, 10 minutes or so.
*Chop them (slice) in food processor.
*Toss with oil and salt on two baking pans.
*Bake at 350 degrees for about 25 minutes.
*Freeze flat, then scrape into bag.

Wheat Tortillas

Makes 16.

*Mix 4 c. ww flour with 2 t. baking powder, 1 t. salt, 4 T. olive oil and any spices wanted (eg. basil).
*Gradually add a little less than 1.5 c. water until dough forms a ball.  Knead and let rise for 15 minutes.
*Separate into 16 pieces, roll out, and heat on skillet (medium to medium-high heat) for 30 seconds or so, until they puff up.

When we get this figured out, try spinach or tomato tortillas.

Whole Wheat Crackers

Makes 2 cookie sheets worth.

*Mix 1 c. ww flour with 1 T. wheat bran, 1 t. corn meal, 1/2 t. salt, 1/4 t. baking powder, and 1/2 t. sugar.
*Add 1 t. honey and 2 T. butter.  Mix with fork, then hands.  Or use a food processor.
*Add spices (such as garlic, cumin, oregano) and sesame seeds.
*Gradually add 3/4 c. water until dough forms a ball.
*Dust dough with flour and roll out on two cookie sheets.  Sprinkle with corn meal and salt.  Slice with spatula and pierce with fork.
*Bake at 400 degrees for 18 minutes.
